WELCOME 2 CHICKI'S WORLD



I dedicate the following song to all those who celebrate being in the kitchen :) .And those who run away from from it you are missing the kitchen fun :P



I DREAM of having my own BIG kitchen somewhat like this... Ofcourse helpers are not mandatory.. as i will b happy doing the washing , chopping and cooking myself... My mobile music will be replaced by a DHAANSU music system that will keep playing all the time :) .... a huge mirror on one of the walls would add fun... hehehhehe

BREAD CHUCKLIES

After relishing this snack for years,I now know the secret... Here, I share with you how my mom makes this  snack called Chucklie.

Ingredients:


Bread - 1 small pack or 12-15 slices of white bread.
Ginger - 1" by 1" piece
Green chillies - 3 medium sized
Suji ( Rawa ) - 1 and 1/2 cup
White Sesame seeds (White Til ) - 1 Tablespoon
Curd - 2 Tablespoon
Turmeric - 1/4 Teaspoon
Salt - According to taste.

Machine for making the spiral chucklies.
Cooking oil - for frying.

Preparation time: 1 hr.

Difficulty level : Easy for those who have been cooking earlier and moderate for 1st time kitchen steppers. Difficult for men :(

Method :

Step 1).Take 2-3 slices of bread at a time and soak them in water for 2-3 seconds and immediately remove the water by pressing the loafs between your palms softly.The water should be removed thoroughly.Wet all the slices and keep them aside in a bowl.



Step 2).Make the ginger-chillies paste in a mixer grinder or alternatively you can grate the ginger and chillies. Then mix all the ingredients to make the dough for Chucklies.

Step 4).now keep it aside to ferment for 30 mins.

Step 5).Heat the cooking oil in a frying pan.While the oil is getting heated fill the dough in the machine and make spiral chucklies on a plate.




Step 6). Now fry 4-5 chucklies in one go. Fry on medium flame so that they get crisp from within too.Take them out once they turn brown.






Step 7).The CRUNCHY CRISPY CHUCKLIES are ready to be served.Eat them hot or you can store them for enjoying them each day.They can be stored for about 5-7 days.

MUSHROOM MUTTER

Ingredients:

Mushrooms - 200 gms
Green Peas - 300 gms
Tomatoes - 3 big
Ginger - 1 inch long approximately
Green chillies - 2 small

Cooking oil - 2 Tablespoon
Jeera ( Cumin Seeds ) - 1/4 teaspoon
Dhaniya Powder ( Dry Corriander Powder ) - 3/4 teaspoon
Haldi ( Turmeric Powder ) - 1/2 teaspoon
Garam Masala ( Powdered Mixture of Ground roasted Spices ) - 3/4 teaspoon
Aamchur ( Dry Mango Powder ) - 1/2 teaspoon
Salt according to taste


THE INDIAN MASALA MAGIC



Preparation time: 10 mins.
Cooking Time: 20-25 mins.

Difficulty level : Medium


Method :

Step 1).Wash the mushrooms and other vegetables thoroughly with water. Then chop them as shown in the picture.





Step 2). Heat the oil and add cumin seeds.


Step 3). After few seconds add ginger, green chillies and chopped tomatoes.





Step 4). Add tumeric power and corriander powder and mix well for 5 mins.





Step 5).Add salt according to taste.



Step 6).Now put the mushroom pieces and again mix well for 1 min.






Step 7).Now add green peas. No need to add water since this dish is without gravy.



Step 8).Mix well and cover it with a lid.


Step 9).Keep it on low flame to cook for 10 -15 mins.But keep mixing after regular intervals.





Step 10).Open the lid and complete the recipe by adding aamchur and garam masala.Mix it well.Garnish it with fresh coriander and serve hot with chapati and parathas.

PEANUT CHAAT

I was talking to one of my BEST FRIENDS an hour ago and discovered that she was quite bored of the same usual taste of snacks.So I am putting up this CHATPATI Recipe for her and all. Let's enjoy the Teekhi - Khatti Chaat in this season of Groundnuts.Here is the recipe for making fresh peanut chaat.

Ingredients:

Fresh Groundnuts 1/2 kg.
Salt 1 teaspoon
Onion 1 medium finely chopped
Tomato 1 medium finely chopped
Lemon 1 small.
Green Chillies ( Optional )
Namkeen Sev ( oy any namkeen of your taste )
Chat Masala

Preparation time: 15 mins to boil the groundnuts and 5 mins to make the chaat.

Difficulty level : EASY

Method :

Step 1).Wash the groundnuts well with water to remove all the mud.


Step 2).Now,in a pressure cooker,put water ,salt and add the groundnuts.Put the lid and boil for 15-20 mins on high flame.
Sometimes the groundnuts are quite hard,so they may require more of boiling.

Step 3).Once they are boiled,remove the cover to get soft salted peanuts.

Step 4). Now mix these with chopped onions,tomatoes,green chillies,chat masala, etc.Squeeze half lemon and mix it all well.


The peanut chaat is ready garnished with my favorite Haldiraam bhujia.So apt for this season.

BAIGAN MAZEDAAR


In my initial days of marriage, guests used to arrive at my place mostly all of a sudden.But I was never scared in serving them lunch or dinner.That is because I followed one very useful Kitchen Tip that my Mom gave. Here it is for you too...

" Always keep few such vegetables in your refrigerator that can be cooked interestingly in just few minutes ."

Baigan Mazedaar is one such simple recipe. This can be put as a side recipe in your main menu. Also you can serve it as 'starters'.Believe me it is scrumptious and everyone who has tried it has requested me to serve it again and again.

Try it yourself.Good luck.


Ingredients:

Brinjal ( Eggplant Vegetable )
Cooking oil
Salt
Chaat Masala

Preparation time: 5 mins.

Difficulty level : EASY

Method :

Step 1).Wash the brinjal thoroughly with water.

Pour cooking oil in a Kadhai ( or Frying Pan ) and keep it on high flame for heating.

Step 2).Wipe with a clean cloth so that each brinjal is fully dry. This is important as it avoids splashing of the oil when frying.




Step 3).When the oil is hot and ready for frying,cut the vegetable into pieces 3-4 inches in size.You can choose to cut in circular shape or rectangular shape.

With the knife make holes in the pieces to let the oil soak in while frying.See the picture below.

Immediately, slide the pieces into the kadhai from one side so that minimum oil splashes out.






Step 4).Once the pieces turn brown take them out. Sprinkle your favorite chaat masala and salt according to taste and have it hot.

Serve in CHICKI STYLE




....placing the BAIGAN MAZEDAAR on paper napkins so that excess oil is absorbed.

TOMATO POHA


Ingredients:

Tomatoes - 2 medium
Green chillies - 1-2 small
Poha ( Rice Flakes ) - 125-150 gms
Fresh corriander
Rai ( Mustard seeds)
Cooking oil - 2 Tablespoon

Dhaniya Powder ( Dry Corriander Powder ) - 1/4 teaspoon
Haldi ( Turmeric Powder ) - 1/4 teaspoon
Garam Masala ( Powdered Mixture of Ground roasted Spices ) - 3/4 teaspoon
Aamchur ( Dry Mango Powder ) - 1/2 teaspoon
Red Chilli Powder - 1/4 teaspoon
Sugar - 1/2 teaspoon
Salt according to taste




Preparation time: 10 mins.

Difficulty level : EASY

Method :

Step 1).Cut tomatoes and chillies into small pieces.


Step 2).Put poha on a sieve and wash it thoroughly under running water.This removes the dirt and makes it soft to eat.Avoid excess of water soaking.






Step 3).Add dry coriander powder, red chilli powder, sugar, garam masala, dry mango powder and salt.Keep aside.




Step 4).Heat oil in a pan and add mustard seeds.Once they start crackling add the chillies and tomatoes and fry with turmeric powder.


Step 5).When done add poha and mix well as shown in the picture below.


Step 6). Serve it hot

SHAAHI TOAST

Ingredients:

White Bread Slices
Cooking oil
Sugar syrup from ready made Gulabjamun can or ( You can make it by mixing lots of sugar in hot water and adding few saffron strands.)

Preparation time: 10 mins.

Difficulty level : EASY

Method :
Step 1). Keep a frying pan on gas with oil in it for deep frying the bread.


Step 2). Till the time oil is getting heated up, cut the bread slices into 1/4 triangles.You can also choose rectangular or square shape.

Now , add the bread in the pan. It is important that the frying pan is heated on high flame so that the bread absorbs less of oil in it. Quickly turn the bread and take it out once it is brown and crisp, as shown in the picture below.


Step 3). Now dip the fried bread in hot sugar syrup till the time they soak it well. Approximately 2 mins.


Step 4). The toasts are ready to be served. Arrange them on a plate and have each with little cream on it.It tastes YUMMY with fresh cream topping.

Garnished with grated dry coconut , cashew nuts, raisins and almonds.
